Quarter-Pound Turkey Burger

This quarter-pound turkey burger is absolutely one of the best burgers that you will ever put in your mouth. While I use wild turkey meat, ground turkey from the grocery store will substitute just fine. I just prefer the depth of flavor that wild turkey provides.

What’s the difference between wild and pen-raised turkeys?

Domestic and wild turkeys are very different in both appearance and flavor. With their rich brown and black feathers, wild turkeys look like our typical idea of a turkey. Domesticated turkeys, on the other hand, don’t look much like the turkeys we drew with our crayons as kids for Thanksgiving. Instead, they are bred to have white feathers.

Turkeys in the wild are also smarter than their domesticated cousins and have keener eyesight. They need it to survive in the woods!

More important for the flavor of their meat, wild turkeys are strong from flying, running, and foraging for food. They use their muscles far more than pen-raised turkeys. All of this activity can cause a wild turkey to be tough, but if you prepare it correctly, the taste is out of this world.

What Is the Best Turkey Meat for Burgers?

Some people choose turkey over beef for burgers to lower the fat content of their meal. However, the fat content really depends on the part of the turkey that gets ground for the meat. Dark meat is higher fat than white meat.

Going purely for flavor, I like the darker meat of turkey thighs for this burger recipe. Many people do not like the thighs of a wild turkey, but when ground and used in these turkey burgers, they are a real winner.

What to Serve with Turkey Burgers

Served with chipotle sauce, these burgers are truly addictive. Try them with homemade fries and apple-mustard coleslaw.

If you have leftovers (we never do), these patties are great for breakfast with fried eggs and grits. You can also freeze the patties.

Ingredients
  

  • 1 pound ground turkey thighs
  • 1 pound ground pork
  • 4 ounces ground thick-cut bacon
  • cups bread crumbs
  • ¼ cup olive oil
  • ¼ cup milk
  • 2 large eggs lightly beaten
  • 2 tablespoon pepper
  • 1 tablespoon salt
  • 1 tablespoon rosemary chopped
  • 1 tablespoon basil chopped
  • 1 tablespoon red pepper flakes

Instructions
 

  • Mix all ingredients in a large bowl. Be careful not to overwork the turkey mixture.
  • Prepare ¼ pound balls and flatten to 3/4 inch thick patties.
  • Place patties on a griddle or grill on medium high heat. Cook 3 to 5 minutes on each side until cooked through and caramelized on each side. Serve on your favorite bun with your favorite toppings and condiments. In my opinion, Chipotle Dipping Sauce can’t be beat!

Notes

Hint: These patties do not shrink much so you do not have to compensate with larger patties.
