Vinaigrette Dressing – Adds Flavor to Any Salad

I love a variety of salad dressings, including this creamy blue cheese dressing. However, for both everyday and special dinners, the very best dressing for any salad is usually a simple vinaigrette dressing. These dressings are extremely versatile to fit whatever salad you’re serving.

So what is a vinaigrette dressing? Vinaigrettes are merely an emulsion of oil, acid, and fresh herbs. They are extremely healthy and add tremendous flavors to the lettuce or spinach leaves or an array of green herbs.

Olive oil supplies us with many antioxidants and vitamin E, as well as offering protection from heart disease as part of a Mediterranean diet. Vinegar or lemon juice, or sometimes orange juice, supplies our bodies with enzymes that aid in the digestion of food. The fresh lemon juice in this recipe also adds vitamin C and antioxidants. These well-balanced flavors and healthful benefits of a vinaigrette dressing make a great accompaniment to almost any salad.

The variety comes in the choice of vinegar or acidic juice and the selection of complementary herbs and other flavor additions. In this dressing, I keep it simple with lemon juice, garlic, and Dijon mustard. You may want to try your own experiments with flavorings, but you really can’t go wrong with a basic vinaigrette dressing.

Ingredients
  

  • 11/2 cups olive oil
  • 1/4 cup lemon juice
  • 1/2 teaspoon fresh garlic, minced
  • 1/2 teaspoon Dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions
 

  • Place lemon juice, garlic, mustard, salt, and pepper into a medium-sized bowl. Slowly pour olive oil into mixture, while continuously whisking as to ensure an emulsion. Store vinaigrette for up to one week in an airtight container in refrigerator.
