Easy Vinaigrette

The very best dressing for any salad is a simple vinaigrette dressing. These dressings are extremely versatile to fit the salad being served. Vinaigrettes are merely an emulsion of oil, acid, and fresh herbs. They are extremely healthy and add tremendous flavors to the lettuce or spinach leaves or an array of green herbs.

Olive oil supplies us with many antioxidants and vitamin E as well as protects from heart disease. Vinegar or lemon juice, or sometimes orange juice, supply our bodies with enzymes that aid in the digestion of food. These well-balanced flavors and healthful benefits should always be an accompaniment to any salad.
